My family and I have made these a BUNCH over the last few months because everyone loves them and it is an easy dinner to throw together last minute. This recipe is inspired by @faymouslyfit on Instagram. It is her recipe with a few modifications to fit my food restrictions and my family’s preferences!
This recipe feeds 5-6 people.
Ingredients:
- 2 lbs of ground turkey or chicken (We like Turkey the best for ours)
- 2 cans of water chestnuts, diced
- 4 cloves of garlic, minced
- 1 yellow onion, diced
- 2 tsp of picked ginger, minced (you can buy pickled ginger pre-minced!)
- 4 tbsps of Sriracha (I like things medium-spicy, but my family likes it hot and adds an extra tbsp of Sriracha in)
- 3 tbsps of rice vinegar
- 5 tbsps coconut aminos (I like the Coconut Secret brand. You can use any type of liquid aminos or even soy sauce if you can have gluten.)
- 2 heads of bib lettuce
- Diced scallions for topping
Directions:
- Dice onion and scallions
- Mince garlic and pickled ginger (if not pre-minced)
- Spray skillet with cooking spray, add ground chicken or turkey and cook on medium heat until browned
- Remove and set aside in a bowl
- Spray skillet again and add onion, garlic, scallions, water chestnuts, coconut aminos, sriracha, and rice vinegar
- Cook for a few minutes until softened and beginning to brown
- Add meat back in and cook for a few minutes until all combined.
- Spoon into lettuce leaves
- Top with scallions or more Sriracha!
