I am a buffalo chicken stan and I’ve had a hard time finding recipes that are gluten and egg free. WELL THE WAIT IS OVER! This is actually one of the best meals I have had in a long time. It tastes so good I can’t even explain it. I could have eaten the entire casserole myself. And its healthy! Just make it I promise its amazing.
Ingredients:
- 3 cups of spaghetti squash shredded (one medium spaghetti squash)
- 2.5 cups shredded chicken (I used a 1 lb rotisserie chicken)
- 1/2 cup diced celery
- 1/4 cup diced bell pepper (any color)
- 1/4 cup diced carrots
- 1/2 tablespoon olive oil
- 1/2 teaspoon onion powder
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/3 cup Frank’s Red Hot
- 1/2 cup shredded cheese
- Salt
Directions
- Preheat oven to 400 degrees
- Cook spaghetti squash – I used this recipe from Delish!
- Shred rotisserie chicken
- Dice vegetables
- In a bowl mix together olive oil, onion powder, pepper, garlic powder, Frank’s Red Hot, diced vegetables, chicken, and spaghetti squash
- Pour mixture into a greased baking dish
- Sprinkle shredded cheese and salt on top
- Bake for 25 minutes!
