Buffalo Chicken Squash Casserole

I am a buffalo chicken stan and I’ve had a hard time finding recipes that are gluten and egg free. WELL THE WAIT IS OVER! This is actually one of the best meals I have had in a long time. It tastes so good I can’t even explain it. I could have eaten the entire casserole myself. And its healthy! Just make it I promise its amazing.

Ingredients:

  • 3 cups of spaghetti squash shredded (one medium spaghetti squash)
  • 2.5 cups shredded chicken (I used a 1 lb rotisserie chicken)
  • 1/2 cup diced celery
  • 1/4 cup diced bell pepper (any color)
  • 1/4 cup diced carrots
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/3 cup Frank’s Red Hot
  • 1/2 cup shredded cheese
  • Salt

Directions

  • Preheat oven to 400 degrees
  • Cook spaghetti squash – I used this recipe from Delish!
  • Shred rotisserie chicken
  • Dice vegetables
  • In a bowl mix together olive oil, onion powder, pepper, garlic powder, Frank’s Red Hot, diced vegetables, chicken, and spaghetti squash
  • Pour mixture into a greased baking dish
  • Sprinkle shredded cheese and salt on top
  • Bake for 25 minutes!
