Ingredients
- 3 mashed overripe bananas
- 1/2 cup pumpkin puree
- 1/4 cup of maple syrup (If you want it sweeter, you can add another 1/4 cup)
- 1/2 cup almond milk
- 1/3 cup melted vegan butter
- 1 tsp apple cider vinegar
- 1/2 tsp vanilla extract
- 1 and 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp pumpkin pie spice OR 1/4 tsp nutmeg, 1/2 tsp cinnamon, 1/4 tsp ground ginger
- 2 cups gluten free flour
- Handful of chocolate chips!!! 🙂
- Sprinkle of cinnamon sugar
- Tbsp of maple syrup
Directions
- Mash bananas in a bowl and add pumpkin puree
- Mix in maple syrup, almond milk, melted butter, apple cider vinegar, vanilla, baking powder, baking soda, and spices
- Add flour and mix until batter forms
- Mix in chocolate chips
- Pour into a 9 inch loaf pan and sprinkle on tbsp of syrup and cinnamon and sugar
- Bake for about 40 minutes
