Banana Pumpkin Bread

Ingredients

  • 3 mashed overripe bananas
  • 1/2 cup pumpkin puree
  • 1/4 cup of maple syrup (If you want it sweeter, you can add another 1/4 cup)
  • 1/2 cup almond milk
  • 1/3 cup melted vegan butter
  • 1 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 1 and 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice OR 1/4 tsp nutmeg, 1/2 tsp cinnamon, 1/4 tsp ground ginger
  • 2 cups gluten free flour
  • Handful of chocolate chips!!! 🙂
  • Sprinkle of cinnamon sugar
  • Tbsp of maple syrup

Directions

  1. Mash bananas in a bowl and add pumpkin puree
  2. Mix in maple syrup, almond milk, melted butter, apple cider vinegar, vanilla, baking powder, baking soda, and spices
  3. Add flour and mix until batter forms
  4. Mix in chocolate chips
  5. Pour into a 9 inch loaf pan and sprinkle on tbsp of syrup and cinnamon and sugar
  6. Bake for about 40 minutes
