I’m a huggggeee banana bread fan, but ever since eliminating gluten and eggs from my diet, it’s been SO hard to find a worthy recipe. BUT, ladies and gentleman, I think I have found it. Shout out to mamaknowsglutenfree.com for the inspo. This recipe can easily be made with gluten and with eggs if you are lucky enough to have both of those 🙂
Ingredients:
2 or 3 very ripe bananas
⅓ cup of unsalted butter (can use vegan butter or coconut oil)
1 teaspoon baking soda
1 ½ cups gluten free flour
¼ teaspoon xanthan gum (I have made it without this and it still turns out great)
Pinch salt
¾ cup granulated sugar
½ cup plain applesauce (or 2 eggs)
1 teaspoon vanilla extract
Extras: chocolate chips & cinnamon
Directions:
- Preheat oven to 350 degrees
- Spray a loaf pan or muffin pan with cooking spray
- Mash bananas in a bowl until smooth
- Add baking soda, butter, sugar, salt, applesauce, vanilla and mix
- Add flour and mix
- Pour into pan
- Sprinkle cinnamon sugar on top of batter
- Bake for 50 min to an hour
